Cuts and Prices

We use Steving meats, a family-owned USDA-inspected processor in Kersey, Colorado. They dry-age and vacuum-pack our beef.

Our harvest season generally runs from mid-July to early November. Cut variety can get sparse in the winter before our first harvest of the year and between harvests. Below are cuts we have in stock.  If you’d like to order by the cut, give us a call or email and we will check our freezer for actual weights and then be able to give you a total, taking a credit card over the phone and/or delivering your order to market or on our delivery run for you.
